Light 'N Crisp Waffles


Preheat Waffle maker (Max Heat for Oster model 3883)

HINTS: First >>>Put beaters in freezer!  Keep milk and eggs in frig until right before measuring & mixing them AND when mixing hold only the handle of the measuring cup, trying to keep ingredients cold as possible!

In 8-cup measuring glass or large mixing bowl, measure & stir together the dry ingredients, set aside.

Separate eggs: whites into a 2-cup measure glass, yolks into small 1/2 cup bowl. Beat egg whites to form kinda stiff peaks & set aside. (IMPORTANT process to achieve light texture)

Measure oil & milk and add to flour mixture, along with egg yolks. (NOT EGG WHITES) Beat on low until moistened, scraping bowl. Increase to medium speed, mix until smooth, scraping bowl. With spatula, gently fold in the beaten egg whites, don't stir.

Pour 3/4 cup (even, not overflowing) batter onto hot grids, cook about 3:00-3:15 min, or longer for crispness for model 3883
