Cheesecake Tarts-XMAS

Mix graham crumbs and butter & drop about 1/2 tsp (w/ rounded bottom) into each tart pan lined with "mini baking cups" (not petit four, too small). Use bottom of the teaspoon to press mixture into cups.

For double recipe, use 8c glass measuring cup to beat filling ingredients. Add one ingredient at at time, mix on low after each. Then mix on high, until smooth, thick & creamy. FILL cups to top; a level amount in a round-style tablespoon. Makes 20-24 ish tarts (double recipe: 40 ish)

Bake @ 375 degrees, 17-20-ish min till tarts just start to brown. Let pans cool 15-20 min. To remove from pans, carefully run thin knife around each cup. Place in plastic storage, cover tightly. Chill thoroughly, at least 2-4 hrs, before serving. Keeps in frig up to 4 wks. Top with cherry right before serving.
