Mandarin Orange Tapioca FLUFF!

(*optional substitute fresh strawberries: Prep ahead, cut in small bite-size pieces, add a little powder sugar, stir well & refrigerate till time to add to jello)

Start Boiling water, microwave. 

Pour oranges in a colander, don't rinse. Shake & carefully move oranges around to drain. Then put towel under & over the colander & refrigerate.

Empty pudding pkgs into an 8 cup glass measure, carefully pour in boiling water and stir well; then add jello and stir thoroughly until dissolved.

Pour into 8" square pyrex & refrigerate, uncovered. After about 1 hr, stir with fork & then spatula, thoroughly & return to frig until slightly congealed, 45min - 1 hr more.

Using spatula, stir jello, scraping bowl. Fold in cool whip, slowly, adding little at a time, to desired consistency (use about 1/2 container of cool whip), don't want it too liquidy!  Fold in well-drained mandarin oranges... or...*optional fresh strawberries

FOR BEST RESULTS: Scoop into desired serving bowls (1 or 2), cover and refrigerate overnite, or for at least 4 hours.
