Barbecue Baby Back Ribs - COOKS Pressure Cooker

BEST TO PREP AT LEAST 1 DAY PRIOR TO GRILLING, 2 days ahead is okay too.   Allow about 1/2 hour prep time...

Spray bottom of pressure cooker and portable rack with non-stick cooking spray. Prep Steaming Liquid & Thickly slice the onion. Cut ribs into serving pieces (2 ribs together, 6 lbs yields about 12-14 pieces)

Layer ribs in pressure cooker, sprinkling each layer with paprika and onions. Pour in liquid. Seal pressure cooker and put on stove between Medium & High.

When 15 lbs pressure is reached (regulator is rocking slow but steady), takes approx 20-30 min-ish to reach pressure. Then, Start timer: Pork BABY Back or Pork Back with Extra Meat: 25 min.

>>TRICK to the Pressure Cooking Process: stay close & watch the pressure regulator, should be a "slow steady, rocking motion." If regulator begins to make frequent noise (occasional is okay), or seems to be rocking fast:  LOWER THE HEAT SLIGHLTY; after 30 sec-ish it should return to slow & steady.  Repeat this process if necessary.

When timer goes off, turn off heat, BUT leave cooker on the burner until the regulator stops rocking. THEN remove from burner to a hot pad & let pressure drop on it's own, about 20-30 min-ish to cool down or may leave ribs in cooker for awhile longer, until ready to prep & store them....

Carefully remove ribs one at a time, dip in the liquid & lightly brush each rib w barbecue sauce. Place ribs into large container (or 2) & seal tightly. Refrigerate overnite (or for at least several hours, ribs will fall apart on the grill if not refrigerated first!)

Grill day... take ribs out of frig about half-hour before cooking, to bring close to room temp. Grill on med-high heat for about 10 min, turning & coating all sides of ribs generously with Mesquite/Hot & Spicy mixed barbecue sauce.

Flavorful, Super-Tender, Fall-Off-The-Bone Ribs..YUM!
