Meat Loaf

From the Kitchen of: Me, combined with Others


 

IMPORTANT! use 80/20 ground beef for a moist meatloaf!

Drop beef bouillon cube into 1 cup of Hot water, break up & dissolve thoroughly. Sprinkle 1 tsp Hamburger(or other seasoning) & stir, then split into 1/2 cup portions. Chop vegies.

Grease/spray the meatloaf pan sides & bottom.

In Medium bowl, stir bread crumbs with seasoning, 2 TB water and 1/2 cup bouillon. Fold in onions & any add-ins.

In Very Large bowl, break up & spread out the meat, add eggs & spread across the meat. Spread bread crumb mixture over the top.

Hand-mix well, but gently, don't over mix. Pat meat mixture gently into pan, forming a slight mound in the center.

Bake 350 degrees, 1 hour, temp should be about 150-155 degrees. If not, return to oven for 5-10 min. Must be at least 160 degrees, then remove from oven, cover w/ foil, rest 10 minutes (meat will continue to cook a bit).

About 1/2 hour into meat loaf baking... Prep Gravy in a sauce pan on medium heat until simmer, reduce heat to  low simmer, stir frequently, then on very low heat to keep warm until serving, stir occasionally.
