Cut outer skin off of canadian bacon, cut tomato slices (optional), place muffins in toaster, but don't toast yet...
>>HOLLANDAISE... In saucepan, whisk hollandaise sauce mix with milk. Add butter and bring to a boil, stirring frequently. Reduce heat to medium-low, simmer, and stir until thickened, about 1 minute. Put on low burner to keep warm until just before serving
2020 "Poached Eggs" re: stove-top Egg Poacher, Yay! BEST WAY TO POACH!!! (2023)
*1-4-egg Eggsentials teflon poacher! (Amazon June 2020) a MUST!... instructions...
-add about 1/2 inch water to pan, then onto Power Boil Burner on HIGH, boil for a few moments
-reduce heat to LOW LEVEL 2, watch for a few moments of a nice steady simmer
-take refrigerated egg(s) out, break into poacher cups, add poacher unit to pan & cover.
- 2 to 2.5 minutes for KC runny egg, 4 min for ideal egg, for my taste (results may vary by egg size)
---Assemble: muffin w/ a little butter, bacon, egg, sauce on top ENJOY!
Prior to Spring 2020: In Nordic Ware 2-egg microwave poacher, 1 tsp water for each egg, then add egg. Pierce yolks w/ a fork. Snap cover closed. Microwave eggs on 50% power, for runny yolk 1:20- 1:40 min, cooked yolk 1:30-1:50 min. (pending size of eggs) Let stand in poachers, while muffins are toasting.
REHEAT SAUCE: add a little milk prior to reheat
