Crockpot Chicken and Rice
Spray your crockpot with cooking spray
Pour the uncooked rice in the bottom
Mix the cream of mushroom soup, chicken broth, and seasoning together, then pour over the rice
Place the chicken breasts on top of the rice mixture
Season the chicken with salt and pepper
Cook on LOW for 4-5 hours (or HIGH for 2-3 hours)
If adding vegetables, stir them in during the last 30 minutes
Important Tips:
Don't lift the lid during cooking - steam needs to stay in to cook the rice properly
The chicken should reach 165°F internal temperature
If the rice seems dry when you check it, add a little more broth
The rice on the edges might get a bit crispy - that's actually pretty good
Variations:
Use cream of celery soup instead
Add a can of drained mushrooms
Swap onion soup mix for taco seasoning and add salsa for a Mexican version
Use brown rice but increase liquid to 3 cups and cook time to 6-7 hours on low
This is a true one-pot meal - everything cooks together and you get tender chicken with perfectly cooked rice underneath. Really low effort for a complete dinner.
