Beef Pot Roast-Instant Pot PRESSURE COOK

1.5 lb cross rib roast, 1 TBL canola oil, Large red onion, 1.2 cups-ish water mixed w half-package McCormick Slow Cookers Savory Pot Roast, about 2.5 lbs small yellow potatoes, LOTS of celery & fat baby carrots. Cut potatoes in half and (& quartered the larger ones), chunky chopped celery, cut carrots in half.
-Season beef with 1 1/2 teaspoons salt and 1 teaspoon black pepper. Heat oil; add beef and cook until evenly browned, about 2-3 minutes per side; set aside.
-Add onion, and cook, stirring frequently, until translucent, about 2-3 minutes. Stir in seasoned liquid, layer potatoes, carrots & celery and top with the roast.
-Original Instant Pot time said 1 hour, but we changed it to 45 minutes...PERFECT! Served w McCormicks Beef Gravy that comes in a small box. YUMMY!
3-lb cross rib roast: same procedure & vegies as above, but 2 cups of water mixed with 1/2 pkg Ital beef season. Cook 1 hour on High
