**Chicken Paprikash-Csirke Paprikas', 6 qt crock

SERVES 12-15

(RE: DUMPLINGS: For a double 6-egg recipe... Make 1-2 days ahead & refrigerate. Day of: Put dumplings on counter at the same time as paprikash & sour cream, stir occasionally to get them to room temp)

PREP 1-2 DAYS AHEAD to marinate chicken for maximum flavor & tenderness

Allow about 1.5 hrs-ish to prep...
Finely chop & saute onion & mushrooms in about 3 Tblsp shortening or butter. Finely chop garlic and stir in right before removing from heat. Mixture should be moist but not liquidy, drain if necessary, and set aside to cool.

Mix next 4 ingredients in Large bowl & stir well after each ingredient. Set aside, covered.

Cut RAW FRESH TENDERLOINS across the grain, "1 inch" bite-size chunks

The key is to marinate the chicken & sauce for a couple of days....Here is one way to do it:

Drop chicken pieces into VERY LARGE bowl. Sprinkle the reserved 4 TBsp paprika over chicken & toss until well-coated. Add mushroom mixture to chicken & toss to coat. Cover tightly and refrigerate to allow chicken to marinate while cleaning sink & dishes...
THEN add tomato soup mixture, over the top of chicken (don't stir) cover & refrigerate for 2 days (NOTE: DON'T add sour cream).

On day 2, stir the tomato mixture to coat the chicken, back in frig.

SERVING DAY: 1 HR ON COUNTER
Paprikash & sour cream on the counter about 1 hour before cooking time (dumplings on counter too, if previously refrigerated). Put half of paprikash in crock & stir both containers thoroughly with sour cream. Cover each & stir thoroughly & frequently to help bring to room temp.

After about an hour, add remaining mixture to crock pot, carefully insert bay leaves w/ stems showing.

Cook on LOW
1) raw chicken: *3.5 hrs  12/2020 definitely 3.5 hrs!
2) pre-cooked shredded chicken: *2-2.5hrs
*About one-hour before shortest cook time, remove bay leaves, stir, cover: stay on LOW if need more heating time, or move to Warm for up to half-hour.

RE LEFTOVERS if run out of dumplings before the sauce: June 2016 Barilla Campanelle pasta was very good!
