Potato Latkes (pancakes)

From the Kitchen of: Gramma Florence Mandel


Mix all ingredients until very smooth. Heat the shortening in a skillet. Drop the potato mixture into it by the tablespoon.

Fry until brown on both sides.  Drain well, on papertowels.  Serve with meat dishes or just separate, with applesauce or sour cream.

NOTE: the potatoes may be grated in a blender.
