Bread n Eggs

On Large cutting board, cut bread into bite-size pieces. Separate the pieces & leave for about half-hour(?) till they get very dry. *Also may use fresh bread and air dry the pieces for a longer period of time.

Then... In a Large skillet, melt butter & shortening slowly over medium heat. Hand-beat eggs with salt & pepper and set aside.

When butter is melted, add bread and use spatula to get all the pieces well-coated. Cook & stir periodically to get all sides of bread a little brown & quite crispy (but on burnt). Then turn heat to low (or turn off if using electric stove).

Pour egg mix into pan, quickly remove the pan from heat & use spatula to stir/coat all the bread pieces very well. Return the skillet to the original burner & stir/coat gently until egg is cooked, but still moist.

The result should have some separate scrambled egg pieces along with the egg-coated bread... This is a "Fat-Full" & filling comfort food dish!! Maybe serve with side of fresh fruit to lighten it up! Yum!
