Ham Pinwheels

1) To the softened cream cheese, add the chives & optional horseradish, stir thoroughly. Spread 1/4 of the cream cheese mixture onto each piece of ham
...note: ham needs to have some thickness & cream cheese needs to be softened to make this task easier :-)
2) Pickles: Trim the ends off the pickles
3) Place 2 pickles, ends touching, on one short edge of the ham and roll the meat closed
4) Place the rolls on a dish and put into freezer for about 1-2 hours-ish (makes them easier to slice)
5) Slice each roll into 8 pieces, yields 32 pinwheels. Place on plate, cover and refrigerate until served
