Chicken Pot Pie (or turkey)

1. Heat oven to 425 degrees
2. Using 9 inch pie pan, prepare pie crust as directed on package for a two crust pie
3. Melt butter over medium heat. Add onion; cook two minutes or until tender.
4. Stir in flour, salt, and pepper until well blended.
5. Gradually stir in broth and milk, cook, stirring constantly until bubbly and thickened
6. Add chicken and mixed vegetables, remove from heat.
7. Spoon chicken mixture into crust lined pan. Top with 2nd pie rust and flute; cut slits in several places.
8. Bake 425degrees for 30 to 40 minutes or until crust is golden brown.
9. Let stand five minutes before serving
