Eggs Benedict CASSEROLE!! - Thanksgiving

Search On-line for Breakfast "Casserole" or "Bakes" ideas!

*ALWAYS USE THE WHITE 9x13 Deep Dish rectangle baking dish! ...Spray baking dish* and cut meat in 1/4 inch-ish cubes and english muffins into 1-inch cubes (9 pieces per muffin)

In large bowl, whisk eggs, milk, green onions (whites only) and salt until well mixed.

In baking dish, layer half the meat cubes, then all the muffin cubes, and top with remaining meat. Pour egg mixture over casserole. Cover baking dish with plastic wrap and refrigerate overnight.

NEXT DAY...
Remove plastic wrap & cover casserole with aluminum foil. Preheat the oven to 375 degrees F  Bake until eggs are nearly set, about 40 minutes; remove foil. Continue baking until eggs are completely set, about 10 more minutes. **Prep hollandaise sauce mix during this time. If need to HOLD casserole till guests arrive: Cover tightly with foil & leave in oven lowest temp, for up to another 20 min-ish.


>>HOLLANDAISE... In saucepan, whisk hollandaise sauce mix with milk. Add butter and bring to a boil, stirring frequently. Reduce heat to medium-low, simmer, and stir until thickened, about 1 minute. Put on low burner to keep warm until just before serving... then...
Drizzle hollandaise over casserole, sprinkle green onion tops, then paprika and serve!
