Boneless Skinless Chicken Breasts

Chicken should be of even thickness. Use a food hammer or big jar to pound the breasts to attain. Season the breasts to taste with salt and/or pepper. Heat the pan over medium heat, drizzle olive oil into a pan. When hot, add the Chicken Breasts. Cook on one side for 1 minute. Turn over, cover, turn heat to low and cook for 10 minutes. Leaving covered remove the heat and let sit for another 10 minutes.

DO NOT REMOVE COVER for entire 20 minutes!
