Fettuccine-Light Version


Start water for fettuccine; & coat a med-large fry pan with a little olive oil.

When water starts to boil, add noodles. Turn fry pan burner to just below high; when hot, add stir fry veggies. Cook both for about 10-12 minutes. Noodles to al dente or firm.

When veggies start to crisp, turn burner to low and add chopped fresh garlic, cubed chicken & sprinkle parmesan; stir well and turn burner off.

Drain noodles. Layer ingredients in the noodle pot: veggie mixture, GENEROUS parmesan, noodles, sauce... Stir well and heat for about 5-6 min.
