Eggplant Rollatini

Dip eggplant in egg, then coat w/bread crumbs. Heat olive oil in large skillet over medium heat. Fry eggplant on each side til golden brown. Drain on paper towels.

Preheat oven to 350'

Spread thin layer of ricotta on each eggplant slice. Add prosciutto. Roll up tightly and put seam side down in 9x13 baking dish. Pour sauce over each and top w/mozzarella.

Bake 15 minutes or until cheese melts.
