Noodles & Cottage Cheese (Haluska)

Place sticks of butter in sauce pan on low-med, covered loosely. Start water for noodles and cook according to package; drain & set aside...

IMPORTANT: cook butter till it browns, check frequently to avoid burn, but must cook till it's quite brown; this will take awhile, still cooking for a while after noodles are done (butter might appear to separate, that's okay).

When butter is ready, return noodles to pot over low heat. Stir in cottage cheese, pour butter over all and stir thoroughly till heated through to a BUTTERY, CHEESE-SLIGHTLY-MELTED DELICIOUSNESS! & serve immediately. Or may prepare day or 2 ahead, refrigerate and reheat to a BUTTERY, CHEESE-SLIGHTLY-MELTED DELICIOUSNESS!
