Scrambled Eggs

Pre-heat a skillet on the stove on medium-low heat. Melt a pat or two of butter, coating the entire cooking surface of the pan. Mix the eggs, a splash of milk in a measuring cup with a fork until completely mixed. Add a bit of salt and pepper to taste.

Pour the mixture into the heated pan. As it begins to solidify, lift and turn over cooked portions letting the liquid portions move to the cooking surface. Do not over stir.

When the eggs are mostly cooked, add a couple more pats of butter, enough to generously coat the eggs.

Serve hot.
