Green Chile Chicken Scoops


Best to make chicken mix ahead, at least 1 hour to blend flavors...

Drain chicken well, stir with fork to create shreds, and toss w/ GENEROUS sprinkles of **Hot Sauce.  Drain chiles, as much as possible. Add chiles (& chopped jalapeños) and toss well & refrigerate.

Put chicken mix on counter to come closer to room temperature, about 10 min. Place scoops on a microwave plate (pie plate works great).

Fill scoops with a Tablespoon of chicken mix. Add cheese on top. For pie-size dish, microwave on 70-80% power for 2 minutes-ish or till cheese just starts melting.
